This recipe for decorated sandwich biscuits originally came about due to an online market I was doing. I was asked if I would create a recipe and video for an online Bake Off as part of an online market. I tried to think of something that has simple ingredients because supermarkets might not have lots of unusual ingredients at that time (due to the pandemic). They are also easily customisable as you can use any spread in the middle and decorate them however you want. I used strawberry jam in some, peanut butter in others and a couple of chocolate hazelnut spread ones for good measure. If you watch the video you can also see that I decorated them in a few different ways to give you a little bit of inspiration.

Ingredients

  • 200g Plain Flour

  • 100g Caster Sugar

  • 1/2 tsp Salt

  • 1/2 tsp Brain Powder

  • 3/4 tsp Bicarbonate of Soda

  • 6 tbsp Melted Vegan Butter

  • 1 1/2 tbsp Soya Milk

  • 1 tsp Vanilla Extract

  • For Decorating
  • 125g Icing Sugar

  • Sprinkles

  • Jam

  • Chocolate Spread

Directions

  • Mix the flour, sugar, bicarbonate of soda, baking powder and salt in a large bowl.
  • Add the melted butter, milk and vanilla and mix well. It might feel too dry but keep mixing until it comes together in a ball. Chill in the fridge for at least 30 minutes.
  • Preheat the oven to 160°c. Line a baking tray with grease proof paper.
  • Roll the dough out on a floured surface to 1/2cm thick. Use cookie cutters to cut your shapes. Cut a small hole in half of the cookies. Place on a baking tray and bake in the oven for 11 minutes. Allow to cool.
  • Once cooled it’s time to make the icing. Mix a water into the icing sugar a few drops at a time until tick but spreadable. Decorate the top biscuits (the ones with the middle cut out) with the icing and sprinkles.
  • Use your jam or spread to sandwich together the plain bottoms and the decorated tops.
