If you’re anything like me you will need an ingredient for baking, buy a big packet and only use a little bit. I have so my bags of half used sultanas, dried cranberries and seeds in my cupboards and I thought while I’m at home for a while I should try and use them up and free up some extra cupboard space. This easy granola is great because you can use all your favourite things in it. As long as you use six cups of dry ingredients to one cup of wet then it’ll work out just fine.
I used dried cranberries, sultanas, sunflower seeds, walnuts and peanut along with oats for the dry ingredients in my granola. For the wet ingredients you want to use about half fat and half sweetener. This will make it not too sweet. If you’re looking for a sweeter breakfast just add a little more sweetener than fat. I used peanut butter for the fat and maple syrup for the sweetener because that’s what I had in. Sometimes I also use a little bit of vanilla extract for a bit of extra flavour.
Another great way to use up left over nuts, seeds and dried fruit are these fruit and nut clusters. Just like this granola they are also suitable for vegans.

2 Cups Oats
2 Cups Mixed Dried Fruit
1 Cup Seeds
1 Cup Mixed Nuts
1/4 Cup Smooth Peanut Butter
1/2 Cup Maple Syrup
Directions
- Preheat the oven to 160c. Mix together all the dry ingredients.
- Melt the peanut butter slightly so it is runny. A few seconds in the microwave should do this.
- Stir the wet ingredients into the dry. Make sure it’s mixed well and all the dry bits are coated in the wet.
- Spread the mix out onto a large flat baking tray covered in baking parchment. Bake for around 40 minutes, stirring every 10 and keeping an eye on it so it doesn’t burn. Allow to cool before storing in an airtight container.
