I love a good cheesecake. Years ago I used to make a no bake lemon one which always went down well and my cheesecake brownies are a hit every time! I found a recipe on Pinterest for an Apple Crumble Cheesecake and I just had to make it as that’s two of my favourite things! I couldn’t stop eating it and had to give it away to stop myself eating the whole thing!

I adapted the recipe a lot because there were things in it I didn’t like (cinnamon for example) so I played around with the quantities and changed things up a bit.

The cheesecake has a biscuit base with a creamy cheesecake middle and is topped with caramelised apples and that all important crumble topping (my favourite bit)!

Caramelised apples

Preheat the oven to 180/160ºc. Chop the apples into chunks and put in a baking tray with the brown sugar and cinnamon. Bake in the oven for 25 minutes, remove and turn the oven down to 160/150ºc.

Biscuit base

While the apple is baking, put the digestive biscuits and melted butter in a food processor and blend until it's a crumbly texture. Alternatively, crush the biscuits by hand and mix in the melted butter. Press into a lined springform tin (about 8-9 inches) making sure the whole base is evenly covered.

Cheesecake

Mix all of the cheesecake ingredients together until smooth and fully combined. Pour on top of the biscuit base and spread evenly.

Topping

Spoon the apples and any caramel over the top of the cheesecake and then sprinkle the crumble topping evenly over the whole thing. Bake in the oven for 1 hour, remove and allow to cool completely before refrigerating.

100g Dark Brown Sugar
1 tsp Ground Cinnamon

250g Mascarpone
500g Cream Cheese
100g Caster Sugar
1 tsp Vanilla Extract
2 Eggs
Crumble topping
100g Dark Brown Sugar
100g Plain Flour
100g Unsalted Butter
50g Oats

It sounds delicious! I love cheesecake and I love crumbles so a dessert like this ticks all the boxes for me. I have to say though I do like cinnamon so I would probably add a little.
