Brownie Mince Pies
Mince pies with a brownie topping!
- 175g Plain Flour
- 75g Unsalted Butter
- 25g Icing Sugar
- 1 Eggs
- 1 Jar Mincemeat
- 180g Carnation Chocolate Topping and Filling
- 35ml Sunflower Oil
- 50g Self Raising Flour
- 75g Dark Muscovado Sugar
- 50g Chopped Dark Chocolate
- 1 Eggs
This time last year I went to watch Paul Hollywood Live and was inspired to make a batch of Paul’s mince pies. Then I made some Mary Berry cranberry ones to compare. I also saw a recipe for brownie mince pies but thought two mince pie recipes was enough for one year. These are my version of brownie mince pies.
I used carnation chocolate topping that I also used in my millionaires muffins. They don’t taste overly chocolaty so they still taste like mince pies.
Make the pastry by rubbing together the flour, icing sugar and butter. Once it looks like small breadcrumbs mix in the egg. Chill in the fridge for a least 30 minutes.
Make the brownie mix by melting the carnation topping in the microwave for 30 seconds until just melted. Stir in the oil and flour. Once combined add the sugar and egg and stir in the chopped chocolate.
Once the pastry is chilled, preheat the oven to 180ºc and grease a cupcake tin with butter. Roll out the pastry and use a pastry cutter to cut out circles big enough to cover the cupcake tins (I used a glass cup).
Add a spoon of mince to about half way and a spoon of brownie mix on top. Bake for about 25 minutes until the pastry is cooked and the brownie is still gooey in the middle. Dust with icing sugar.
