I loved Paul Hollywood City Bakes on Food Network so my sister bought me the book ‘The Weekend Baker’ (which goes with the series) for my birthday. One recipe that stood out on the programme were cheesecake brownies and the recipe can be found in the book.

I love brownies and cheesecake is my favourite so this recipe was ideal! I’ve made lots of different brownies so take a look at my Celebrations brownies, Marshmallow brownies and S’mores brownies while you’re here! I haven’t done a recipe for cheesecake yet but I’ve seen some really good ideas like Rolo cheesecake!

Step 1
Mark as Complete

Preheat the oven to 170ºc and line a brownie tin (22x29cm) with baking parchment.

Melt 225g of chocolate with the butter (I did this in the microwave in 10 second bursts to make sure the butter didn’t burn).

Step 2

Beat the eggs and sugar together until pale and thick. Add the melted chocolate and butter mixture to the eggs and stir until thoroughly combined.

Fold in the flour, salt, chocolate chunks and vanilla extract and pour into the prepared in.

Using an electric whisk or stand mixer on a slow speed, beat the cream cheese with the custard powder, sugar, vanilla extract, egg and cream. Mix until smooth and all the ingredients are combine.

Step 4

Drop spoonfuls of cheesecake mix onto the brownie then using a spatula fold through the brownie to create swirls.

Bake for 25-30 minutes depending on how gooey you like your brownie.

Step 5

Leave to cool completely before cutting into squares and enjoying.
