Coconut Flour Pancakes
These coconut pancakes make a great weekend breakfast and are gluten free!
- 4 Eggs
- 1/4 cup Milk
- 3 tbsp Coconut OilSubstitute for vegetable oil
- 1 tsp Coconut SugarSubstitute for caster sugar
- 1/4 cup Coconut Flour
- 1/4 tsp Baking Powder
- 1/4 tsp Salt
This recipe for coconut flour pancakes uses coconut flour, coconut oil and coconut sugar. Coconut sugar is a 1:1 substitute for caster or granulated sugar but coconut flour acts differently to plain flour. It’s more absorbent which means you use a lot less of it and recipes using coconut flour usually call for more eggs.
I’m always looking for new ways to use coconut flour. If you like it as much as I do try my coconut chocolate pie. It has a coconut flour crust.
Mix together the dry ingredients. In a separate bowl combine the wet ingredients.
Whisk the wet and dry ingredients together.
Heat a frying pan on a medium heat and melt a little butter.
