Doctor Who: Cosmic Cupcakes

Cupcakes are one of my favourite things to bake because there’s so many different things you can do with them. You can do different flavour combinations and loads of different decorations etc. I make a lot of cupcakes and I wanted to make Doctor Who themed cupcake because it is my favourite TV show. I love how the purple and blue icing goes together.
These Cosmic Cupcakes look really fun and are pretty easy to make. You can use my vegan vanilla cupcake recipe which is very simple and uses ingredients you are likely to have at home already. Please note that if you want them to be vegan you need to check the sprinkles that you are going to use as lots of sprinkles contain non vegan E numbers. I like to use Baking Time Club sprinkles as they are always vegan and come in so many different colours and shapes.
Cosmic Cupcakes

290g Icing Sugar
60g Butter
2 tbsp milk (dairy free works too)
Gel food colouring in purple, blue and black
Decorations - silver balls, stars etc.
Directions
- Beat half the icing sugar with the butter until fully combined. Add the vanilla extract, 1 tbsp milk and the remaining icing sugar and mix again. If the icing is very thick add the remaining tbsp of milk.
- Divide the buttercream into three bowls. Colour one bowl pink, one blue and one purple (blue+red). Put a blob of black food colouring in each bowl and swirl into the buttercream, not mixing completely.
- Get a piping bag with a large star tip. Put a teaspoon of each colour into the bag, alternating until you've used up all the icing. Pipe the buttercream onto the cupcakes. Sprinkle over your decorations.
