I’m pretty rubbish at crepes. On pancake day I usually make one crepe, mess it up and leave the rest to Billy. I was feeling confident the other day though and made this crepe cake. I actually managed to improve my crepe making skills! The crepes are sandwiched together with whipped cream and the whole cake is covered with chocolate ganache.

Step 1

Mix together the dry crepe ingredients. Melt the butter in a pan on the hob and add to the dry ingredients. Warm the milk in the same pan and add to the dry ingredients with the eggs. Mix together to from a thin batter.

Heat a frying pan on the hob. Add about a quarter of a cup of the crepe batter to the pan and cover the whole base of the pan with it. Cook until browned, flip and brown again. Leave aside to cool. Repeat this step until all of the batter had been used up.

Whip the cream using a stand or hand mixer. Place your first crepe on a cake board or plate. Spread a thin layer of whipped cream over it and add the next crepe. Continue with the remaining crepes.

Ganache

Bring the cream and sugar to a boil in a pan. Pour over the chocolate and butter and mix until the chocolate has completely melted. Let it cool before pouring over the cake and spreading down the sides.
