Cupcakes are one of my favourite things to bake because there’s so many different things you can do with them. You can do different flavour combinations and loads of different decorations etc. I’ve already made Ood Cupcakes as part of this months Doctor Who theme but I’ve wanted to make these cosmic cupcakes ever since looking for inspiration for the Glitter Cupcakes I made a while ago. I love how the purple and blue icing goes together.

They look really fun and are pretty easy to make. You can use any vanilla cupcake recipe but I recommend this one from the Loving it Vegan website. You can just leave out the strawberry extract in the icing if you don’t want the icing to be strawberry flavoured (or swap fit for vanilla extract). Please note that if you want them to be vegan you need to check the sprinkles that you are going to use as lots of sprinkles contain non vegan E numbers.

I got these Dalek cupcake wraps a long time ago. Unfortunately I don’t think they’re available anymore. but you could try printing the base of a Dalek and the top and attaching a stick. I hope you enjoy making these Cosmic Cupcakes.

Step 1
Mark as Complete

Beat half the icing sugar with the butter until fully combined. Add the vanilla extract, 1 tbsp milk and the remaining icing sugar and mix again. If the icing is very thick add the remaining tbsp of milk.

Step 2
Mark as Complete

Divide the buttercream into three bowls. Colour one bowl pink, one blue and one purple (blue+red). Put a blob of black food colouring in each bowl and swirl into the buttercream, not mixing completely.

Step 3
Mark as Complete

Get a piping bag with a large star tip. Put a teaspoon of each colour into the bag, alternating until you've used up all the icing. Pipe the buttercream onto the cupcakes. Sprinkle over your decorations.

Red, blue and black Gel Food Colouring
1 tsp Vanilla Extract
Decorations Silver balls, star sprinkles etc.
