I’ll be honest, I don’t really like salted caramel. I mean it’s OK but I’d just prefer ‘normal’ caramel. However, it’s very popular at the moment. When I heard the idea of putting salted peanuts in cookies I thought this is a way I can get involved with the sweet and salty craze without having to consume salted caramel. Although slightly salted, these double chocolate salted peanut cookies are still really rich and chocolatey. The peanuts give them extra crunch. The recipe made loads of cookies. I started off using a level tablespoon for each cookie but after a few batches I decided to scoop big heaped tablespoons instead.

Preheat the oven to 180ºc and line a baking tray (I used three because I had to do it in batches) with baking parchment. Cream the butter and sugar together until smooth before beating in the eggs and vanilla extract. In a separate bowl mix together the flour, baking powder and cocoa powder.

Add the dry mixture to the wet bit by bit and add the milk. Stir in the chocolate chips and peanuts and spoon a heaped tablespoon of mix onto the baking tray for each cookie. Bake for 12 minutes and leave to cool before eating.
