Who else has got loads of apples to use up? There’s noting better than apple crumble and custard in my opinion but there’s only so much one girl can eat. I decided to find a quick and easy way to use up a few apples to have a little change from crumble. Here’s my easy apple tart recipe. I’ll be back on the crumble soon though so don’t worry.
I actually used coconut jam instead of apricot because it’s the only jam I had in at the time. You could use strawberry (my fav) or even marmalade. I didn’t glaze the pastry as you can probably tell from the photos so that’s something I’ve added into the recipe in hindsight. I used my KitchenAid spiralizer attachment to slice the apples but a knife will do!
To make this vegan just make sure your ready rolled pastry is suitable for vegans (it usually is) and use a plant based milk for glazing.
Preheat the oven to 180ºc or according to the instructions on you pastry packet. Grease a large baking tray and put the ready rolled pastry on so that it overlaps the edges by about 1cm. Spread the jam thinly over the base.
Peel, core and thinly slice the apples. I used the KitchenAid spiralizer attachment which makes it really quick but if you don’t have this you can cover the apples with a bit of lemon juice to stop them going brown.
