Fruit Crumble Bars
Tasty crumble with a layer of fruity jam.
- 1/2 cup Plain Flour
- 1/3 cup Light Brown Sugar
- 1/4 tsp Salt
- 1/2 cup Melted Unsalted Butter
- 2 tbsp Apple Juice
- Strawberry Jam
Last night I decided to do some impromptu baking. After a while trawling the internet for something that I had all the ingredients for I came across these fruit crumble bars. I changed the recipe slightly as it called for coconut oil and I didn’t have any. I’ve changed it so you are likely to have all the ingredients already.
They’re like a flapjack but with less butter and no golden syrup (so I like to tell myself they’re a more guilt free version) and they have a layer of fruit in the middle. I used strawberry jam but you could use lemon curd or another jam.
The quantities for this recipe are in cups. I recently bought some cup measures from Aldi for about £2. They make it so easy and quick to measure out your ingredients. If you don’t have cup measures you can use a teacup as long as you use the same one throughout the recipe to keep the ratios the same.
Preheat the oven to 190ºc and grease a baking tin. Mix together the flour, sugar, salt, oil/butter and juice (you can use a food processor but I just mixed by hand for a chunkier texture).
Spread two thirds of the mixture into the bottom of a greased pan. Spread the jam over this layer evenly and crumble the rest of the oat mixture over the top. Bake for 35 minutes or until golden brown.
