Guest Post: Amy’s Avocado Brownies

- 1 Avocado
- 2 Eggs
- 110g Cocoa Powder
- 85g Plain Flour
- 170g Caster Sugar
- Pinch of Salt

Avocados have taken the health world by storm! With them being the new brunch must have, these little green delights are often popping up on our Instagram feeds normally accompanied by an egg and some seedy wholemeal bread.
However, one main issue I have with avocados is once they’re ripe they’re good for maybe one or two days but that’s about it. After than we often have to throw them sadly away. Fear not!
These brownies can be stored for up to 4 days, if they last that long.
In a bowl combine the eggs, sugar, chocolate powder, salt and flour and whisk well to combine.
Peel and chop the avocado into small pieces before adding to the mixture, whisk well until smooth.
Pour into a tray, line with baking paper. Bake in the oven for 15 minutes on 190°C/170°C Fan/Gas Mark 5. Leave to cool slightly before enjoying whilst warm.
