I saw these Holly Cupcakes on Pinterest and just had to make them. I used a chocolate sponge with vanilla buttercream so they have a Christmas pudding look to them but if you wanted, you could use another cupcake recipe and top with holly decorations. Try this vanilla cupcake recipe.

Preheat the oven to 200ºc and line a cupcake tin with 12 cupcake cases.

Sift the cocoa powder into a bowl and make a paste with the boiling water. Add all of the remaining cake ingredients and mix well to combine.

Divide between the cupcake cases and bake for 12 – 15 minutes. Leave to cool.

For the buttercream, beat the butter and vanilla extract until soft and add the icing sugar. Add the milk until it's good piping consistency. Pipe onto the cupcakes with a icing bag and a star tip.

Make the holly by rolling out the green icing and either cutting by hand or using a holly leaf cookie cutter to make 24 leaves. Then make 36 little red berries and place two leaves and three berries on each cupcake.
