Homemade Sweets: Marshmallows
Vanilla marshmallows are great on top of hot chocolate!
- 4 sheets Leaf Gelatine
- 225g Caster Sugar
- 1/2 tsp Liquid Glucose
- 100ml Water
- 1 Egg Whites
- 1/2 tsp Vanilla Extract
- For sprinkling Icing Sugar
- For Sprinkling Cornflour
This month I’m going to be trying out some homemade sweets recipes. I thought I’d start with a relatively easy one. Marshmallows are quite simple to make if you know how. You basically add sugar syrup and gelatine to whipped egg whites! This recipe makes vanilla marshmallows but I added mint extract to half of the mix. They taste great on top of hot chocolate!
Lightly oil a baking tray and coat with icing sugar and cornflour. Soak the gelatine in 70ml cold water.
Put the glucose, sugar and water in a pan and bring to the boil. Cook for a further 10-15 minutes until a sugar thermometer reaches 127ºc.
Take off the heat and add the gelatine, stirring until completely melted.
Whisk the egg white until stiff. Pour in the hot syrup while still whisking and continue to whisk for about 10 minutes until thick and shiny. Now whisk in the vanilla extract (or your alternative flavour).
Pour into the baking tray and spread evenly. You might need to use a wet palette knife. Cool for 1 hour.
Cover a work surface with cornflour and icing sugar and tip out the marshmallow onto it. Cut into squares and cover all sides in the cornflour and icing sugar mix.
