Mango Sticky Rice Recipe With Thai Taste
- 200g Thai sticky rice
- 300ml Water
- 200ml Coconut Milk
- 1 Mango
- 50g Coconut Sugar
I’ve been trying out some products from Thai Taste and this mango sticky rice was one of my favourites. Mango is my favourite fruit and I love coconut so it’s a great dessert for me. There is a recipe on the packet of sticky rice for mango sticky rice but I have tweaked it a little!
Put the rice and water into a saucepan. bring to the boil, lower the heat and cook for 10-15 minutes until the water is absorbed.
Mix two thirds of the coconut milk and all the sugar together until he sugar has dissolved. Stir in the rice while it's still warm, cover and leave for 30 minutes.
Cut the mango into slices or chunks. Simmer the remaining coconut milk in a pan for 10 minutes. Put 1/4 of the rice into a small ramekin or teacup to mould it and tip it onto a plate. Arrange the mango around it and drizzle with the coconut milk. Repeat for the other 3 portions.
