Marshmallow Brownies
Marshmallow brownies are a step up from traditional brownies.
Ingredients
- 250g Caster Sugar
- 150g Light Brown Sugar
- 225g Unsalted Butter
- 60g Cocoa Powder
- 4 Eggs
- 1 tsp Vanilla Extract
- 225g Plain Flour
- 1/2 tsp Salt
- 1/2 tsp Baking Powder
- 2 handfuls Mini Marshmallows

Since the last few cakes I’ve baked have been cupcakes I decided to do something a little different today. What better than a gooey brownie? A gooey marshmallow brownies of course!
I took a basic brownie recipe and tweaked it a little, including adding some mini marshmallows. The marshmallows melt when in the oven and add extra texture and taste to the brownies.
Preheat the oven to 160ºc and grease a 9x9 square cake tin.
Mix the sugars, butter, cocoa powder and vanilla extract together. Add the eggs individually. Sift in the flour, salt and baking powder and mix well.
Stir in the marshmallows making sure they are distributed evenly throughout the mixture. Pour the batter into a square cake tin or baking tray and spread evenly.
Bake for 20-25 minutes and wait until completely cooled before cutting into squares.
