Meringue Christmas Trees

Ingredients

- 50g Caster Sugar
- 1 tbsp Green Gel Food Colouring

These little meringue Christmas trees are great for a Christmas party or to give as favours. They’re pretty quick and simple to make as long as you whip the egg whites enough to start with. When you think you’ve added enough green food colouring add some more. The colour fades in the oven A LOT. You could use these meringues as decoration on other Christmas bakes.They’d look great around a gingerbread house.
Preheat the oven to 120ºc. Line a baking tray with greaseproof paper. Using an electric whisk or a stand mixer with a whisk attachment, which the egg white until it forms soft peaks. It should keep it’s shape when you lift the whisk out.
While whisking, add the sugar slowly. Keep whisking until stiff peaks are formed. If you’re feeling brave you can hold the bowl upside down over your head. If you’ve done it right it should stay in the bowl!
Carefully stir in the food colouring until it’s all one colour. Spoon the mix into a piping bag with a round tip. Pipe onto the baking tray. Start by making a circle, then carry on upwards in a swirl.
Top with a star and add sprinkles. Bake for 10 -15 minutes or until slightly set on the outside.
