This month I’ve been trying to make a different chocolate recipe every week. By different I mean not just different variations of chocolate sponge each time. So far I’ve made chocolate mousse and a chocolate fridge cake, both of which I will definitely be making again and again because they’re so easy and moreish! Todays recipe is for orange chocolate chip muffins. The sponge is orange flavoured and it’s studded with pieces of candied orange peel and dark chocolate chips.

If you fancy something a bit chocolatey but not too indulgent these muffins are perfect as they’re not too sweet. The orange makes them taste really fresh and tangy too.

Step 1
Mark as Complete

Preheat the oven to 180ºc and line a muffin tin with paper cases. Sieve the flour, baking powder and bicarbonate of soda into a bowl and add half the chocolate chips, 100g of the sugar and chopped orange peel.

In jug mix the oil, 100ml of orange juice and buttermilk and mix in the eggs using a fork.

Combine the wet and dry ingredients and spoon into the paper cases. Top with the remixing chocolate chips and the quartered orange segments. Bake for 25 minutes.

Step 4
Mark as Complete

Put the remaining sugar and orange juice into a pan and heat until the sugar has dissolved. Spoon over each muffin and allow to cool.

300g Plain Flour
2 1/2 tbsp Baking Powder
1/2 tbsp Bicarbonate of Soda
75g Candied Orange Peel Chopped
125g Caster Sugar
70g Chocolate Chips
100ml Sunflower Oil
150ml Orange Juice
200ml Buttermilk
2 Eggs
3 thin slices of Orange
