I’m not really too keen on Christmas cake or pudding. If it was the only option then I’d eat it because it’s OK, but no one else seems to like it either so I always make a different cake for Christmas. Last year I made a white chocolate cranberry cake which went down really well. This year I decided to make an Oreo cake. Not very Christmassy but very chocolatey!

Step 1

Preheat the oven to 180ºC/160ºC fan. Grease two 8 inch circular cake tins. In a small bowl, whisk in the cocoa powder into 125ml boiling water then mix in the oil. Set aside to cool slightly.

In a large mixing bowl cream together the butter, sugar and vanilla extract with an electric whisk until light and fluffy. Beat in the eggs one at a time, adding a little of the flour after each egg to prevent curdling. Beat in the cocoa mixture and gently fold in the remaining flour and baking powder. Divide between the two tins and bake for 40-45 minutes.

Once the cake has cooled, beat the butter and vanilla extract until smooth. Sieve in half the icing sugar, mix until combined and then mix in the rest of the icing sugar. Set aside about 6 Oreos (enough to decorate the cake with) and crush the remainder with a rolling pin until fine crumbs. Mix the crumbs into the icing.

Mark as Complete

Spread over one layer of the cake and place the second layer on top. Now cover the cake with the rest of the icing. Place the whole Oreos on top to finish.
