
Peanut Butter Cups

- 200g Dark ChocolateMake sure it contains no dairy
- 100g Smooth Peanut ButterYour favourite peanut butter

I’ve been doing a lot of reviews lately and I’ve wanted to do another recipe for a while. This one is a pretty easy, no baking required recipe but it’s something I’m sure a lot of people will love. Ever since going vegan I’ve wanted to find a dairy free peanut butter cup. There are some around but they can be more expensive than regular ones so I decided to make my own peanut butter cups.
You only need a couple of ingredients and it’s very quick except for the chilling times. You will need a chocolate mould or use a cupcake tin with cupcake cases and just fill them up a bit of the way. You can use your favourite peanut butter and dark chocolate and they’d be perfect for Valentine’s or mother’s day!
Put the chocolate in a microwaveable bowl and microwave for 30 seconds and then 10 seconds at a time until melted.
Put a small amount of chocolate in each hole of your mould. Spread the chocolate around the mould so all of the sides and bottom are coated. Make sure there are no holes or very thin pieces or your peanut butter will spill out later. Chill in the fridge for 1 hour or until set.
Put a small amount of peanut butter in each chocolate shell (about 2/3 full). Melt the remaining chocolate in the same way and fill the rest of the chocolate shells. Ideally you want it to overflow a little and the scrape across the top to remove the excess chocolate. This ensures a flat bottom and a good seal. Refrigerate for another hour.
Pop the chocolate out of the mould and put them in a nice bag or box.
