
Snickers Cupcakes
Chocolate peanut butter cupcakes wth caramel buttercream and a snickers on top.
Ingredients
- 115g Unsalted Butter
- 115g Caster Sugar
- 2 Eggs
- 100g Self Raising Flour
- 20g Cocoa Powder
- 2 tbsp Crunchy Peanut Butter
- 2 tbsp Milk
Buttercream
- 50g Unsalted Butter
- 250g Icing Sugar
- 4 tbsp plus extra for drizzling Caramel Sauce
- 6 Fun Size Bars Snickers
Directions
I love Snickers. They’re my second favourite in a Celebrations box (after Bounty) and that’s why I decided to make Snickers cupcakes. The actual cupcake is chocolate AND peanut flavour and the buttercream is caramel.
I was going to make my own caramel from condensed milk but then I had the genius time saving idea of using ice cream sauce. I used Askeys toffee sauce (because hey, it tastes almost the same as caramel right?) They also do butterscotch, strawberry, raspberry and chocolate so they could save you time on loads of different occasions. Of course you can use whatever you find in your local shop. I used fun size snickers and cut them in half so you could see the filling but you could use a regular snickers bar or the celebrations size ones depending on what you have available.
Finally, add the peanut butter and milk and combine.
Divide the mix between the 12 cupcakes cases (about 1 tbsp each) and bake for 20 minutes.
Using a star tip, pipe the buttercream in swirls onto the cupcakes. Drizzle with more caramel sauce and top with a piece of Snickers.
