If you follow me on Twitter or like my Facebook page you might know that I now make cakes and treats to order for collection from Nantwich. As well as cakes and cookies I sell brownies, traybake and cookies. I already had a really good brownie recipe so I needed a chocolate cookie recipe. A few months ago while testing Christmas ideas I made these Terry’s Chocolate Orange Cookies. They’re soft inside but chewy on the outside and the orange flavour from the chocolate orange spreads through the whole cookie.
Melt the dark chocolate and butter in the microwave for 30 seconds, mix and then do 10 second bursts until the chocolate melts. Stir in the condensed milk and then mix in the flour.
Put 12 chocolate orange segments aside for later. Chop the remaining chocolate orange into chunks and mix into the cookie dough. Leave to cool until it has firmed up a little and can be handled.
Preheat the oven to 160ºc. Scoop a large tablespoon of dough onto a greased baking tray and repeat for the other 11 cookies. You will need at least three trays so they are not too close to each other. Bake for 12 minutes, place a chocolate orange segment on each cookie and bake for a further two minutes. They will firm up when cooled so you can remove them from the tray.
