Vegan Giant Chocolate Chip Cookie
200g Light Brown Sugar
50g Granulated Sugar
225g Vegan Margarine
2 1/2 Vanilla Extract
240g Plain Flour
1/2 tsp Baking Powder
200g Chocolate Chips
I made this vegan giant chocolate chip cookie at Easter to use up a bag of mini eggs I didn’t use on the cakes I made for my first market. Obviously Easter is over now so mini eggs are a bit hard to come by so in this recipe I use chocolate chips. The point i’m trying to make is that you can mix in your fav chocolate to make it more personal to you. I’m thinking Maltesers if they’re your fav or Terry’s Chocolate Orange at Christmas.
I know the way people like their cookies, like brownies, is a personal thing. Some people like crispy cookies whereas I’m the type of person who likes a soft middle. This vegan giant chocolate chip cookie is on the soft, dense side. You could try baking it longer to make it more crispy throughout but its so big that the edges become too hard.
I decorated the edges of the cookie with chocolate buttercream but you can leave it plain. If you want to decorate it, use this chocolate buttercream recipe and use a large closed star tip in a piping bag.
