
Vegan Pancakes
Ingredients

120g/1 cup Plain Flour

Pinch of Salt

1 tbsp Baking Powder

2 tsp Caster SugarYou can use caster sugar

250ml Milk SubstitureSoya or oat work well
Directions
I love making pancakes for a weekend breakfast so when I started cutting out dairy and eggs I was a bit lost until I realised you could make vegan pancakes. These are American style pancakes and you can have them with whatever toppings you usually have. I had peanut butter, raspberries and a sprinkle of Breakfast by Bella granola!
You can swap the caster sugar for coconut sugar if you are wanting to use a more natural sugar. Both work well.
Mix 120g of flour, 1 tbsp baking powder, 2 tsp sugar and a pinch of salt in a bowl. Whisk in 250ml milk alternative until smooth.
Heat a tablespoon of oil in a frying pan. Once hot, drop tablespoons of mixture into the pan. Cook until you can flip it with a spatula and cook on the other side until golden and cooked through. Serve with your favourite pancake topping.
