
Vegan Pancakes
Ingredients

120g/1 cup Plain Flour

Pinch of Salt

2 tbsp Baking Powder

1 tsp Coconut SugarYou can use caster sugar

250ml Milk SubstitureSoya or oat work well
Directions
I love making pancakes for a weekend breakfast so when I started cutting out dairy I was a bit lost until I realised you could make vegan pancakes. These are American style pancakes and you can have them with whatever toppings you usually have. I had peanut butter, raspberries and a sprinkle of Breakfast by Bella granola!

Mix the flour, baking powder, sugar and salt in a bowl. Whisk in the milk alternative until smooth.

Heat a tablespoon of oil in a frying pan. Once hot, drop tablespoons of mixture into the pan. Cook until you can flip it with a spatula and cook on the other side until golden and cooked through. Serve with your favourite pancake topping.
