Vegan Cookie Dough Recipe

Who doesn’t like to eat cookie dough straight from the bowl? This recipe for vegan cookie dough has chocolate chips and a vanilla cookie dough. You can eat it as it is or follow the instructions below to make pretty cookie dough jars. I am always getting requests to make this cookie dough for markets so I have decided to share the easy recipe here. And since this is Vegan cookie dough it doesn’t contain egg and we will bake the flour which makes it completely safe to eat raw!

I like to make this cookie dough and store it in a jar in fridge where it will be safe to eat for a couple of days (but who is keeping cookie dough for a couple of days?!) Sometimes I like to layer the cookie Dough with chocolate ganache or spread which makes the jars look really cute. I just fill up the jar half way with the cookie dough and then put some warmed ganache or spread. Then fill the rest of the jar almost to the top with cookie dough and top it off with some more ganache at the end! This recipe makes enough for about 4 servings. You can use my chocolate drip recipe to make the ganache which has instructions on how to use the recipe as a filling. The ganache is not too sweet as it uses dark chocolate which makes it a perfect pair with the cookie dough.

You could adapt this recipe to be like your favourite cookies. For example, add rainbow sprinkles for birthday cake cookie dough or swap the chocolate chips for white chocolate chips. Let me know in the comments if you add your own twist to this recipe!

Ingredients

  • 1 Cup Light Brown Sugar 

  • 1/4 Cup Granulated Sugar 

  • 1 Cup Vegan Butter

  • 2 Cups Plain Flour

  • 1 tsp Salt

  • 1 tsp Vanilla Extract

  • 1 Cup Dairy Free Chocolate Chips

Directions

  • Preheat the oven to 150ºC
  •  Once the oven is up to temperature put the flour in a large baking tray (spread it out so it's a thin layer) and bake for 15 minutes. You will need a thermometer to check the temperature. The flour should be over 75ºc. If it is not that hot yet put it back in for 5 minutes at a time. Allow to cool.
  • In a bowl mix together the two sugars, butter, vanilla and salt. Then sift in the flour and mix.
  • Add the chopped chocolate or chocolate chips
