Vegan Fruit and Nut Flapjack Recipe

Ingredients

  • 100g vegan butter
  • 150g golden syrup
  • 150g caster sugar
  • 1 tbsp peanut butter
  • 100g mixed nuts
  • 100g raisins and sultanas
  • 300g oats

How to Make This Vegan Fruit and Nut Flapjack Recipe

  1. Preheat the oven to 130°C (265°F) and grease and line a 20cm square tin.
  2. Put the vegan butter, caster sugar and golden syrup into a large saucepan and heat gently until melted together. Continue stirring until the mixture becomes bubbly and slightly thickened, then remove from the heat.
  3. Stir in the peanut butter until fully combined.
  4. Add the oats, mixed nuts and raisins or sultanas and mix until everything is evenly coated.
  5. Press the mixture firmly into the prepared tin, making sure it reaches all the corners and edges.
  6. Bake for 40 minutes, or until golden on top.
  7. Leave to cool completely in the tin before removing and slicing into 9 squares.

  • Press the mixture down firmly to help the flapjacks hold together.

  • Roughly chop larger nuts so they’re easier to slice through.
