Ingredients
- 100g vegan butter
- 150g golden syrup
- 150g caster sugar
- 1 tbsp peanut butter
- 100g mixed nuts
- 100g raisins and sultanas
- 300g oats
How to Make This Vegan Fruit and Nut Flapjack Recipe
- Preheat the oven to 130°C (265°F) and grease and line a 20cm square tin.
- Put the vegan butter, caster sugar and golden syrup into a large saucepan and heat gently until melted together. Continue stirring until the mixture becomes bubbly and slightly thickened, then remove from the heat.
- Stir in the peanut butter until fully combined.
- Add the oats, mixed nuts and raisins or sultanas and mix until everything is evenly coated.
- Press the mixture firmly into the prepared tin, making sure it reaches all the corners and edges.
- Bake for 40 minutes, or until golden on top.
- Leave to cool completely in the tin before removing and slicing into 9 squares.
