If you want to skip the dried fruit you can replace the 100g of sultanas or raisins with another 100g of Mixed nuts. And of course if you can use whichever nuts you like. If you just want to use one type of nut like peanuts then go for it!

Ingredients

  • 100g Vegan Butter

  • 150g Golden Syrup

  • 150g Caster Sugar

  • 1 tbsp Peanut Butter

  • 100g Mixed Nuts

  • 100g Raisins Sultanas

Directions

  • Preheat the oven to 130ºc/265ºf and grease and line a 20cm square tin
  • Put the butter, sugar and golden syrup in a large sauce pan and heat until melted together. Keep stirring until it becomes bubbly and thickens, then take off the heat.
  • Mix in the peanut butter then the mixed nuts and dried fruit.
  • Press the mixture into the prepared tin, making sure to get it in all the corners and edges.
  • Bake for 40 minutes or until golden on top.
  • Remove from the oven and leave to cool completely before taking it out of the tin and slicing.
