Microwave Sponge Pudding
This super easy microwave sponge pudding is perfect for those times when you have nothing in for pudding. It uses ingredients you probably have in the cupboard takes about 10 minutes to make and bake.
This microwave sponge pudding reminds me of Sunday roast dinners as a child. We would often have this as pudding after the main meal. Sometimes we would have this version which has golden syrup in but other times we would swap out the golden syrup for a couple tablespoons of jam. It works in the same way as the golden syrup and sinks down to the bottom as it cooks (then when you turn it our of the bowl once it is cooked it becomes the top). You could even try using chocolate or hazelnut spread for an extra special treat!
This microwave sponge pudding is great after a roast dinner because it’s quick which is what you want after making a roast! I also have a great recipe for Yorkshire puddings for two which is super quick and easy to go with your roast dinner.
I also have a recipe for a vegan version of this in a mug but you can make it in a bowl as well. Just make sure to grease the bowl if you want to turn it out!

Microwave Sponge Pudding

Ingredients
50g Unsalted Butter
50g Caster Sugar
50g Self Raising Flour
1 Egg
2 tbsp Milk
2 tbsp Golden Syrup
Directions
- Cream the butter and sugar in a bowl until smooth. Mix in the egg and milk a little at a time. Sift in the flour, and fold carefully.
- Put 2 tablespoons of golden syrup/jam treacle or jam in bottom of microwave-safe bowl. Pour the batter over this carefully.
- Cover with cling film and cook for 3 1/2 minutes on full powder, or until the pudding appears set when gently jiggled, and the top is sticky. Serve hot with custard.
