Millie’s Style Cookies
These Millie’s style cookies are really easy to make in just a few steps and are crispy on the outside but soft in the middle. They also taste great warm out of the oven but keep well (if you have any left that is!) It’s a great recipe if you are craving a cookie but can’t get to a shop to buy one as it’s a pretty fast process as far as cookie making goes. You end up with a delicious hand made cookie that you can eat warm.
You can personalise this recipe to make your perfect cookie. For example you could swap the chocolate chips for so many things. Try white chocolate chips or nuts and raisins, or add sprinkles for a birthday cake cookie! If you prefer your cookie a bit more cooked through just bake them for another couple of minutes. Once they come out of the oven they will continue to cook so bear that in mind. If they still look a little gooey when you take them out of the oven they will set a little as they cool. Don’t over bake them or else you could end up with rock hard cookies and some broken teeth!
This recipe for Millie’s style cookies makes 9 cookies and only takes around 25 minutes plus cooling time. It uses everyday ingredients that you probably already have in your cupboards at home.

Ingredients
125g Unsalted Butter
100g Light Brown Sugar
125g Caster Sugar
Pinch of Salt
1 Egg
225g Self Raising Flour
200g Chocolate Chips
Directions
- Preheat the oven to 180ºc. Cream the butter and sugars, then add the egg and vanilla extract. Sift in the flour and salt and mix. Now add the chocolate chips.
- For a homemade look roll into walnut size balls. Alternatively, roll into a long thick sausage shape and slice into discs. Place on a baking tray lined with baking paper. Bake for 7-10 minutes. Allow to cool slightly.
