Ingredients

For the Brownies

  • 450g Vegan Dark Chocolate
  • 200ml Soya Milk
  • 100ml Vegetable Oil
  • 1 tsp Vanilla Extract
  • 150g Light Brown Sugar
  • 175g Self Raising Flour
  • 50g Cocoa Powder

How to Make Vegan Brownie Recipe

Prepare the Brownies

  1. Preheat the oven to 160°C/320°F and grease and line a deep 20x20cm baking tin.
  2. Break up 250g of the vegan dark chocolate (keeping the remaining 200g aside) into a microwave-safe bowl. Microwave for 30 seconds, stir, then continue heating in 30-second bursts, stirring between each, until completely melted.
  3. Pour the soya milk, vegetable oil, vanilla extract and melted chocolate into a large mixing bowl. Beat with a hand or stand mixer until smooth.
  4. Add the light brown sugar, self raising flour and cocoa powder, mixing until fully combined.
  5. Chop the remaining 200g of vegan dark chocolate into small chunks and fold them through the brownie batter.
  6. Pour the batter into the prepared tin, spreading it evenly into the corners.
  7. Bake for 25–30 minutes depending on how gooey you like your brownies.
  8. Leave the brownies to cool completely in the tin before removing and slicing into 12 pieces.
