Top Tips

  • Trex is a brand of white vegetable shortening in the UK. We use it in this recipe to keep the buttercream sturdy.
  • Baking Block is a yellow vegetable fat that we use in this recipe for flavour.
  • Make sure all of the fats are at room temperature before mixing.
  • Sift the icing sugar to avoid lumps in the finished buttercream.
  • Mix for several minutes to create a lighter, fluffier texture.
  • Add gel food colouring or flavour extracts after the buttercream is fully mixed.
