Ingredients
For the Brownies
- 225g vegan dark chocolate, divided
- 100ml soya milk
- 50ml vegetable oil
- 1 teaspoon vanilla extract
- 75g soft brown sugar
- 85g self-raising flour
- 25g cocoa powder

- 100g icing sugar
- 25g fondant icing
- Green gel food colouring
- Red gel food colouring

How to Make This Vegan Christmas Iced Brownie Recipe
Step 1: Prepare the Brownie Batter
Preheat your oven to 160°C (320°F) and grease and line a small 15 x 15cm deep baking tin. If you’re making these brownies as gifts, a disposable baking tin works well too.
Break up 125g of the vegan dark chocolate and melt it in the microwave using 30-second bursts, stirring well between each burst until smooth.
In a large mixing bowl, combine the melted chocolate, soya milk, vegetable oil and vanilla extract, whisking until smooth.
Add the self-raising flour, soft brown sugar and cocoa powder, mixing until a thick brownie batter forms.
Roughly chop the remaining dark chocolate and gently fold it through the mixture. These chocolate chunks melt into the brownies as they bake, making every bite extra rich and indulgent.
Step 2: Bake the Brownies
Spread the brownie batter evenly into the prepared tin, making sure it reaches all the corners.
Bake for 25–30 minutes, depending on how gooey you like your brownies. The edges should be set while the centre remains slightly soft.
Leave the brownies to cool completely in the tin before decorating.
Step 3: Make the Buttercream
Beat the softened vegan butter until smooth and creamy.
Gradually mix in the icing sugar until light and fluffy, then add green gel food colouring a little at a time until you’ve created your desired festive shade.
Transfer the buttercream to a piping bag fitted with a large open star nozzle.
Step 4: Make the Fondant Decoration
Knead a small amount of red gel food colouring into the fondant icing until evenly coloured.
Roll the fondant out to approximately 5mm thick before stamping it with your Christmas-themed fondant cutter or stamp. Cut around the design using a round cutter or a sharp knife.
If using gold edible paint, carefully paint over the lettering or design once the fondant has dried slightly to make it stand out.
Step 5: Decorate the Brownies
Pipe a decorative buttercream border around the edge of the cooled brownie.
Pipe a small buttercream rosette in the centre and gently place the fondant decoration on top.

Directions
- For the Brownie
- Preheat the oven to 160ºc/320ºf and grease and line a small (around 15x15cm), deep baking tin (or use a single use tin for giftable brownies).
- Break up 125g (leaving 100g aside) of the vegan dark chocolate into a microwavable bowl and microwave for 30 seconds and mix. Keep microwaving for 30 seconds and mixing until it is melted.
- Pour the soya milk, oil, vanilla extract and melted chocolate into a large bowl and mix with a hand or stand mixer until smooth.
- Stir in the flour, sugar and cocoa powder.
- Chop the remaining 200g of vegan dark chocolate into small chunks. Fold into the brownie batter.
- Pour the brownie batter into the prepared tin making sure it reaches all the corners.
- Bake for 25-30 minutes depending on how gooey you like your brownies and leave to cool in the tray.
- For the Decoration
- Make buttercream frosting by beating the vegan butter block until smooth and mixing in the icing sugar. Add the green food colouring a little at a time until you get your desired colour.
- Make the fondant topper by kneading a small amount of red food colouring into the fondant icing. Roll out the icing to about 5mm thick and use your fondant stamp to stamp the fondant. Cut out the topper with a round cookie cutter or a knife. You can use the gold edible paint to paint the writing to make it stand out more.
- Put the buttercream icing into a piping bag with an open star tip and pipe a border around the edge of the brownie
- pipe a small rosette of icing in the middle of the brownie and stick the fondant icing decoration on top.
- Finish with Christmas sprinkles.
