How to Make This Vegan Damson and Apple Crumble Recipe
Filling
Put the sugar and damsons into a saucepan and add around 1cm of water. Heat gently until the sugar has dissolved and the damsons have broken down.
Pour the mixture through a sieve into a bowl to remove the stones and skins, then return the smooth damson puree to the saucepan.
Peel, core and chop the apples before adding them to the damson mixture. Cook for around 5 minutes until the apples begin to soften, then pour the fruit filling into an ovenproof dish.
Crumble
Preheat the oven to 170°C/340°F.
Rub the vegan butter into the plain flour until the mixture resembles breadcrumbs. Rub in the oats before stirring through the caster sugar.
Sprinkle the crumble evenly over the fruit filling and bake for 25-30 minutes until the topping is golden brown and the fruit is bubbling around the edges.
Serve warm with vegan custard, dairy-free cream or your favourite vegan ice cream.
Top Tips
- Cooking the damsons first makes it much easier to remove all of the stones.
- Bramley apples give a lovely sharp flavour, while eating apples create a sweeter crumble.
- Don’t overwork the crumble topping – keeping it slightly chunky gives the best texture.
- Allow the crumble to stand for 10 minutes before serving so the filling thickens slightly.
Storage
Store leftover vegan damson and apple crumble covered in the fridge for up to 3 days. Reheat in the oven until piping hot, or microwave individual portions. You can also freeze the baked crumble for up to 3 months and defrost overnight before reheating.
