Vegan Decorated Sandwich Biscuit Recipe

Ingredients

For the Biscuits

  • 200g Plain Flour
  • 100g Caster Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 3/4 tsp Bicarbonate of Soda
  • 6 tbsp Melted Vegan Butter
  • 1 1/2 tbsp Soya Milk
  • 1 tsp Vanilla Extract

For Decorating

  • 125g Icing Sugar
  • Sprinkles
  • Jam
  • Chocolate Spread

How to Make This Vegan Decorated Sandwich Biscuit Recipe

For the Biscuits

  1. Preheat the oven according to your original recipe and line a baking tray with baking paper.
  2. In a large bowl, mix together the plain flour, caster sugar, salt, baking powder and bicarbonate of soda.
  3. Add the melted vegan butter, soya milk and vanilla extract, mixing until a soft dough forms.
  4. Roll out the dough on a lightly floured surface and cut out your chosen biscuit shapes.
  5. Place the biscuits onto the prepared baking tray, leaving a little space between each one.
  6. Bake for 11 minutes, or until the edges are just beginning to turn golden.
  7. Leave the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Decorating

  1. Mix the icing sugar with a small amount of water until you have a thick but spreadable icing.
  2. Decorate the tops of half of the biscuits with the icing and sprinkles, then leave them to set completely.
  3. Spread jam or chocolate spread onto the plain biscuits.
  4. Sandwich each decorated biscuit on top of a filled biscuit and serve.

Directions

  • Mix the flour, sugar, bicarbonate of soda, baking powder and salt in a large bowl.
  • Add the melted butter, milk and vanilla and mix well. It might feel too dry but keep mixing until it comes together in a ball. Chill in the fridge for at least 30 minutes.
  • Preheat the oven to 160°c/320ºf. Line a baking tray with grease proof paper.
  • Roll the dough out on a floured surface to 1/2cm thick. Use cookie cutters to cut your shapes. Cut a small hole in half of the cookies. Place on a baking tray and bake in the oven for 11 minutes. Allow to cool.
  • Once cooled it’s time to make the icing. Mix a water into the icing sugar a few drops at a time until tick but spreadable. Decorate the top biscuits (the ones with the middle cut out) with the icing and sprinkles.
  • Use your jam or spread to sandwich together the plain bottoms and the decorated tops.
