How to Make Vegan Halloween Gummy Worm Brownies
Step 1: Prepare the Brownie Batter
Preheat your oven to 160°C (320°F) and grease and line a small deep baking tin measuring approximately 15 x 15cm.
Break 125g of the vegan dark chocolate into a microwave-safe bowl, reserving the remaining chocolate for later. Microwave in 30-second bursts, stirring well between each burst until completely melted.
In a large mixing bowl, combine the melted chocolate, soya milk, vegetable oil and vanilla extract. Beat together until smooth.
Add the self-raising flour, light brown sugar and cocoa powder, mixing until just combined.
Roughly chop the remaining 100g of chocolate into chunks and gently fold them through the brownie batter.
Pour the mixture into the prepared tin and spread it evenly into the corners.
Step 2: Bake
Bake for 25–30 minutes, depending on how gooey you like your brownies.
Leave the brownie to cool completely in the tin before decorating.
Step 3: Make the Decoration
Place the Oreo biscuits into a food processor and blitz until they resemble coarse soil.
Beat the softened vegan butter until smooth, then mix in the icing sugar and cocoa powder until you have a creamy chocolate buttercream.
Remove the cooled brownie from the tin and place it onto a serving plate or board.
Spread the chocolate buttercream evenly over the top using a palette knife.
Sprinkle the crushed Oreo crumbs over the buttercream to create a layer of “soil”.
Finish by arranging the vegan gummy worms across the top before slicing and serving.
Top Tips
- Allow the brownie to cool completely before adding the buttercream.
- Leave the Oreo crumbs slightly chunky for a more realistic soil effect.
- For extra gooey brownies, bake closer to 25 minutes.
- Add the gummy worms just before serving so they look their best.
Variations
- Add vegan chocolate chips to the brownie batter for even more chocolate.
- Decorate with edible eyeballs or Halloween sprinkles alongside the gummy worms.
- Use crushed chocolate sandwich biscuits instead of Oreos if preferred.
- Drizzle melted vegan chocolate over the top for an extra indulgent finish.
