- 240g Plain Flour
- 150g Caster Sugar
- 1 tbsp Baking Powder
- 250ml Soya Milk
- 125ml Sunflower Oil

- 2 tbsp Reserved Lemon Juice

How to Make This Vegan Lemon Loaf Cake Recipe
For the Lemon Loaf Cake
- Preheat the oven to 175°C/345°F and grease and line a loaf tin.
- Reserve 2 tablespoons of the lemon juice for the drizzle.
- In a large mixing bowl, combine the caster sugar, soya milk, sunflower oil, remaining lemon juice and vanilla extract.
- Gently fold in the plain flour and baking powder until you have a smooth batter.
- Pour the mixture into the prepared loaf tin.
- Bake for approximately 40 minutes, or until a skewer inserted into the centre comes out clean.
- Leave the cake to cool completely.
For the Lemon Drizzle
- Mix the reserved 2 tablespoons of lemon juice with the icing sugar until smooth.
- Drizzle the icing over the cooled cake.
