Vegan Microwave Sponge Pudding in a Mug
Sometimes you just need a cake in a few minutes. This is the recipe for the time. I grew up eating microwave sponge pudding as pudding after Sunday Lunch so it is really nostalgic for me. I have not eaten one in so long since I do not eat eggs or dairy anymore so I set about making a vegan version. This vegan microwave sponge pudding tastes just like my childhood. I have designed this recipe to be a mug cake so that it is a single serving and it is really easy to make.
I use golden syrup in my sponge pudding but I also remember having it with strawberry jam which you could try too. Just replace the 1/2 tsp with the same amount of golden syrup on top of the mix just before microwaving. You could maybe even try chocolate spread or hazelnut spread but this is not something I have tried before. Leave a comment if you do try that and let me know how it goes!

I have used teaspoons and tablespoons to measure the ingredients for this vegan microwave sponge pudding because it’s really want to be a last minute recipe for when you just need a sweet treat fast. It saves on getting out the weighing scales and then cleaning them and putting them away after. Make sure you take note that some ingredients are measures in tsp (teaspoons) and others are in tbsp (tablespoons). You do not want to get the measurements wrong!
It might not be the prettiest dessert you have ever seen but this classic really hits the spot and it is really quick and easy to make. If you are looking for a non vegan version I have a recipe for a traditional microwave sponge pudding that serves 4.
Vegan Microwave Sponge Pudding in a Mug

Ingredients
3 tbsp Self Raising Flour
4 tsp Caster Sugar
1/3 tsp Baking Powder
2 1/4 tbsp water
4 tsp Sunflower Oil
1/2 tsp Golden Syrup
Directions
- Mix the dry ingredients together in a large mug. Add in the water and sunflower oil and mix until smooth.
- Add the golden syrup on top of the mix. It will sink through the cake while it's in the microwave.
- Cover the mug with cling film and microwave at 900w for 2 minutes. If it still looks wet cook for a further 30 seconds and repeat until done. Remove from the microwave and let it stand for 1 minute. I like to serve with custard.
Notes
- My Microwave cooks at 800w. If yours cooks higher than this reduce the cooking time to 2 minutes. If it's not cooked yet give it another 10 seconds at a time.
