Vegan Orange Chocolate Chip Loaf Recipe

Ingredients

  • 240g plain flour
  • 150g caster sugar
  • 1 tablespoon baking powder
  • 250ml soya milk
  • 125ml sunflower oil
  • 3 tablespoons orange juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 100g dairy-free dark chocolate, roughly chopped
  • 130g icing sugar

How to Make Vegan Orange Chocolate Chip Loaf Recipe

Step 1: Prepare the Cake Batter

Preheat your oven to 175°C (345°F) and grease and line a loaf tin.

Reserve 2 tablespoons of the orange juice for the icing.

In a large mixing bowl, whisk together the caster sugar, soya milk, sunflower oil, the remaining orange juice, vanilla extract and orange extract.

Add the plain flour and baking powder, folding gently until just combined.

Roughly chop the dairy-free dark chocolate into chunks and fold it evenly through the batter.

Pour the mixture into the prepared loaf tin and level the top.

Step 2: Bake

Bake for approximately 40 minutes, or until a skewer inserted into the centre comes out clean or with just a few moist crumbs attached.

Allow the loaf to cool completely in the tin before decorating.

Step 3: Make the Orange Icing

Mix the reserved orange juice with the icing sugar until smooth.

Pour the icing evenly over the cooled loaf cake, allowing it to drip naturally down the sides.

Leave the icing to set before removing the loaf from the tin and slicing.

Directions

  • Preheat the oven to 175°c/345ºf and grease and line a loaf tin. 
  • Reserve 2 tablespoons of orange juice for later. Mix the sugar, soya milk, oil, remaining orange juice, orange extract and vanilla in a large bowl. Gently fold in the flour and baking powder. Chop the chocolate into chunks and fold through the mixture. Pour into the loaf tin and bake for 40 minutes.
  • Once the cake has cooled mix the remaining 2 tablespoons of Orange juice with the icing sugar and pour over the cake. Allow the icing to set slightly before removing from the loaf tin and slicing.
