Ah, Pancake Day! The one day of the year when it is not just acceptable but mandatory to eat your body weight in pancakes. But we’re not talking about the fluffy American stacks. If you are looking for those I have a recipe for a vegan version right here. But that is not for today. Today we are going classic with proper English pancakes for pancake day. These classic English pancakes are thin, golden, and just begging to be drizzled with syrup, dusted with sugar, or drowned in lemon juice (or all three- there is no judgment here!). Unlike their fluffy American cousins, these beauties are more like crêpes. They are delicate, lacy, and perfect for rolling, folding, or stacking high. This vegan pancake recipe is so easy to make and only uses a few store cupboard ingredients that you probably already have.

My favourite toppings for pancakes on pancake day is the classic sugar and lemon juice but there are so many options you could do. For example Biscoff spread, chocolate spread, golden syrup or lots of berries. You could even go savoury with things like vegan ham and cheese or mushroom and spinach as there is no sugar in the batter recipe. The best thing about this vegan pancake recipe is that it is the perfect base for pretty much anything. I like to fold my pancakes but you can roll them up or stack them in a big pile.

Ingredients

  • 150g Plain Flour

  • 300ml Soya Milk

  • Pinch of Salt

  • 1 tbsp Vegetable Oil

Directions

  • Mix together the flour and salt.
  • Whisk in the soya milk a little at a time. This helps prevent lumps.
  • Heat a small amount of oil in a pan.
  • Once heated, pour some batter into the pan and swirl it so it reaches the edges.
  • After a few minutes flip the pancake and cook the other side for a further few minutes.
  • Serve with your favourite toppings.
