How To Make Vegan Pesto Swirls Recipe
To Make the Dough
- In a large bowl, mix together the soya milk, melted vegan butter and caster sugar. Sprinkle over the yeast and leave for 5 minutes.
- Add 2 1/2 cups of the flour, reserving the remaining 1/4 cup for later, along with the salt. Mix until combined.
- Knead the dough in a stand mixer for 5 minutes or by hand for 10 minutes.
- Cover the bowl and leave in a warm (but not hot) place for 1 hour, or until the dough has doubled in size.
To Shape the Pesto Swirls
- Add the remaining 1/4 cup of flour and mix it into the dough. Knead for a couple of minutes, then leave to rest for 5 minutes.
- Line a rectangular baking tray, approximately 20 x 30cm, with baking paper.
- On a clean, floured surface, roll the dough into a rectangle approximately 30 x 40cm and 1/2cm thick.
- Spread the vegan pesto evenly over the entire surface of the dough, making sure to reach the edges.
- Fold the dough in half by bringing one short edge over to meet the other, creating a rectangle approximately 30 x 20cm.
- Cut the folded dough into strips at 2cm intervals. Twist each strip to create the swirl effect.
- Coil each twisted strip around itself, tucking in the ends. Some of the oil from the pesto may seep out; you can use this to brush the tops of the swirls.
- Place the swirls on the prepared baking tray and leave to prove for a further 30 minutes. Meanwhile, preheat the oven to 180°C / 350°F.
- Bake for 25 minutes, or until the swirls are lightly golden and cooked through.
- Remove from the oven and leave to cool before serving.
