  • 400ml coconut milk (from a tin)
  • 150g light brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt

How to Make This Vegan Salted Caramel Recipe

  1. Add the coconut milk, light brown sugar and vanilla extract to a saucepan.
  2. Heat gently over a medium heat, stirring occasionally as the sugar dissolves.
  3. Continue cooking until the caramel begins to bubble and thickens slightly.
  4. Remove the saucepan from the heat.
  5. Stir in the pinch of salt until fully combined.
  6. Leave the caramel to cool before using. It will continue to thicken as it cools.
